About the Role
LOCATED IN BROOKLYN, NY:  We are looking for a skilled and reliable Prep Cook to join our fast-paced commissary kitchen team in Brooklyn. This role is central to the smooth operation of our large-scale packaged prepared meal production, requiring speed, precision, and the ability to perform consistently under pressure in a high volume environment. The ideal candidate takes pride in quality, consistent prep work, works well within a team, and maintains the highest standards of food safety and hygiene throughout every shift.

Key Responsibilities
  • Execute all prep and production tasks as directed by the Production Chef or Kitchen Manager, working to daily production schedules
  • Prepare, weigh, measure, cut, and portion ingredients to exact specification and in large quantities
  • Cook and assemble components for packaged prepared meals, ensuring consistency across every unit produced
  • Work accurately to recipes and portioning guides to meet packaging and weight requirements
  • Set up and stock prep stations with all necessary supplies at the start of each shift
  • Operate kitchen equipment including slicers, mandolines, mixers, blenders, and batch cooking equipment safely
  • Support the packing line as required, ensuring meals are correctly portioned, assembled, and ready for packaging
  • Label, date, and correctly store all prepped and finished items in line with HACCP and food safety guidelines
  • Monitor and rotate stock (FIFO), flagging any shortages or spoilage to the head of section
  • Maintain strict allergen controls and awareness in line with production protocols
  • Keep prep areas, equipment, and storage spaces clean, sanitized, and organized throughout the shift
  • Communicate proactively with team members to ensure smooth coordination across production tasks
  • Adhere to portion control and yield guidelines to minimize waste and control food costs
  • Assist with end-of-shift breakdown, cleaning, and preparation for the following day's production
Requirements
  • Minimum 1–2 years of experience as a prep cook or kitchen assistant in a high volume setting
  • Proven ability to maintain speed and accuracy during sustained, high output production
  • Strong knife skills and familiarity with a wide range of prep techniques
  • Solid understanding of food hygiene and safety regulations (Food Hygiene Level 2 certificate preferred)
  • Ability to follow recipes, production schedules, and verbal instructions precisely
  • Physically fit and able to stand for extended periods, lift heavy items, and work in a fast paced environment
  • Punctual, dependable, and able to work early mornings, evenings, weekends, and holidays as required
  • Positive, team-oriented attitude with the ability to stay focused and calm under pressure
Desirable
  • Experience in a commissary, production kitchen, ready meal manufacturing, or contract catering environment
  • Familiarity with large-batch cooking, production-scale food preparation, and packing line operations
  • Understanding of weight and portion accuracy requirements in a packaged food environment
  • NVQ Level 2 in Professional Cookery or equivalent culinary qualification
  • Familiarity with allergen awareness and dietary requirements
  • Basic cooking skills and an interest in progressing within the kitchen brigade
